Today, I’m excited to share with you one of Turkey’s most beloved and comforting recipes: Mercimek Çorbası (Turkish Lentil Soup), a hearty red lentil soup. It’s simple, nutritious, and packed with the flavors of both Mediterranean and Middle Eastern cuisine, making it a perfect balance of spices and health.
Why This Dish?
This Turkish soup is a staple in many households, and what I love most about it is how it embodies the region’s culinary history. Lentils are widely used across Mediterranean and Middle Eastern countries, and the use of spices like cumin and paprika adds an extra depth of flavor, tying together Mediterranean freshness with the heartiness of Asia.
Ingredients:
- 1 cup red lentils
- 1 onion, finely chopped
- 1 carrot, peeled and diced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups vegetable or chicken stock
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Lemon wedges (for serving)
Instructions:
Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions and carrots, sautéing them until softened, about 5 minutes.
Add the Lentils and Spices: Stir in the lentils, tomato paste, cumin, and paprika. Sauté for another 2 minutes to allow the spices to bloom.
Simmer: Add the stock and bring to a boil. Reduce the heat and simmer for about 20-25 minutes, until the lentils and carrots are soft.
Blend: Once cooked, use an immersion blender to blend the soup until smooth and creamy. You can also leave it slightly chunky if you prefer texture.
Season: Taste and adjust the seasoning with salt and pepper. Serve hot with a drizzle of olive oil and lemon wedges on the side.
